Hiking trails/national parks off I-81 in Virginia/ in NW North Carolina?

My family is making a trip down Interstate-81 and were hoping to be able to take a day-hike in George Washington National Park or Jefferson National Park. We're looking for a hike with reasonably easy miles, nice views, and peace. Hotel/motel accommodation must be near by and accessible. Any suggestions?
